3/4cupOrange juice (fresh or good quality purchased)
Instructions
Preheat oven to 350 f
Grease or spray loaf pan(s). Whisk together flour, baking powder, baking soda and salt. Stir in orange zest, cranberries (and nuts if using- see notes) Set aside.
In a large bowl cream together butter, sugar and egg until smooth. Stir in orange juice.
Beat in flour mixture until just moistened. Do not over work this batter.
Pour into prepared pan(s)
Bake for 1 hour or until bread springs back and lightly touched. Remove from oven and let stand 10 minutes then turn out onto a wire rack .
Cool completely then wrap in plastic wrap.
Notes
Can add 1.2 cup of chopped pecans. I do not add nuts to anything that will be gifted due to allergies.
2.Freezes well.
