Cranberry Orange Bread

Sweet, tart and delicious bread for eating or gifting

Ingredients
  

  • 2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp grated orange zest
  • 1 1/2 cups fresh cranberries
  • 1/4 cups salted or unsalted butter-softened
  • 1 cup Granulated Sugar
  • 1 Egg
  • 3/4 cup Orange juice (fresh or good quality purchased)

Instructions
 

  • Preheat oven to 350 f
  • Grease or spray loaf pan(s). Whisk together flour, baking powder, baking soda and salt. Stir in orange zest, cranberries (and nuts if using- see notes) Set aside.
  • In a large bowl cream together butter, sugar and egg until smooth. Stir in orange juice.
  • Beat in flour mixture until just moistened. Do not over work this batter.
  • Pour into prepared pan(s)
  • Bake for 1 hour or until bread springs back and lightly touched. Remove from oven and let stand 10 minutes then turn out onto a wire rack .
  • Cool completely then wrap in plastic wrap.

Notes

  1. Can add 1.2 cup of chopped pecans. I do not add nuts to anything that will be gifted due to allergies.
      2.Freezes well.
