Jalapeno Hard Candy
Little bites of spiciness
- 10 fresh Jalapenos with seeds
- 1/4 Cup Water
- 1 1/3 Cup Granulated Sugar
- 3/4 Cup Light Corn syprup
Lightly spray sheet pan and 2 plates with oil.
In a blender, puree jalapenos and water until liquid. Measure out 1/2 cup and you may discard the rest.
Combine jalapeno liquid with sugar and corn syrup in a medium saucepan with a heavy bottom. Boil until thickened and 'hardened'
Warning do not burn
Pour liquid onto prepared sheet pan and allow to cool slightly.
Using a spoon scoop small pieces of the candy and place on the prepared plates.
Let cool and store in air tight containers in the fridge.
