Egg Roll in a Bowl

Fast and easy one pan meal.

Ingredients
  

  • 1 Pound Breakfast sausage
  • 2 tsp Minced, grated or pressed garlic
  • 1 pkg Broccoli Slaw mix
  • 1/4 cup Soy Sauce preferably low sodium
  • 1 1/2 tsp Fresh minced ginger
  • 1 Tbl Sriracha
  • 1 Whole egg
  • 1 Bunch Green onion-sliced
  • Drizzle of sesame oil optional

Instructions
 

  • In a large skillet, cook sausage until no longer pink. Drain if necessary.
  • Add garlic and saute for 30 seconds.
  • Add slaw , ginger, soy sauce. Stir fry gently until heated thru but slaw is not soft and soggy. A few minutes tops. Add water if it is too dry.
  • Push slaw mix to the side and add the egg. Scramble until cooked and combined into slaw/ sausage mixture,
  • Stir in half of the sriracha and combine into mixture. TASTE. If not spice enough add more sriracha. You can always add more at the table.
  • Sprinkle with green onions and drizzle with a little sesame oil. Again..TASTE adding more sriracha or soy or sesame oil.
