sliced 1/2 " thick

Coconut or almond flour
more as needed

beaten

Finely crushed pork rinds
coconut oil spray
Ragu Simply No Sugar added red sauce
Mozzarella grated
Instructions
Set up dredging station: in separate bowls: flour of choice, beaten eggs, crushed pork rinds.
Proceed in that order to coat each eggplant coin. Place on baking sheet pan that has been sprayed with oil.
Baked 10-17 minutes at 350. Turning once until browned.
Top with grated cheese and bake until melty.
Service with a spoon of red sauce and more cheese as desired.
