Greek Chicken

Fast and easy chicken recipe for family and fancy enough for guests

Ingredients
  

  • 1/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tsp chopped oregano
  • 1 Tbsp lemon zest
  • 2 Pounds chicken, boneless-skinless can use bone in and skin on
  • 1 Tbsp olive oil
  • 1 1/2 cups cherry tomatoes- halved
  • 1/2 cup kalamata olives- rinsed
  • 1 1/2 tbsp chopped garlic
  • 4 oz Feta cheese-crumbled

Instructions
 

  • 425 degree oven
  • Combine, salt, pepper oregano and lemon zest. Coat chicken well-pressing into meat. Hint: you can also just use a quality premixed Greek seasoning. Just make sure it is not too salty,
  • Heat oil in large oven proof skillet. medium high heat..
  • Cook chicken skin side down if using skin on chicken. Otherwise cook meatiest side down. Cook until well browned 10-12 minutes. Turn.
  • Add tomatoes, olives and garlic being sure to keep browned side up.
  • Bake 20 minutes until cooked thru and tomatoes as soft and beautiful

Notes

I have also added asparagus, during the last 10-15 minutes in the oven, to this recipe. Adds pretty color and my family loves asparagus.
This works great on top of mixed greens. Beautiful presentation and can spread the meal servings. All of the flavorful juices added to the crunch of the greens is terrific!
